Farmstead Cheese is the featured local product at the Appalachain Sustainable Agriculture Project this month. We will be doing lots of delicious specials with goat and cow cheeses from Three Graces Dairy. Three Graces Dairy is located on Ferguson Farm in the Shelton Laurel area of Western North Carolina. All of their cheeses are “farmstead”. In order for a cheese to be classified as “farmstead,” as defined by the American Cheese Society, the cheese must be made with milk from the farmer’s own herd, or flock, on the farm where the animals are raised. All of their “farm pets” are spoiled rotten on a diet of healthful grain, supplements and free range pastures managed without the use of herbicides or pesticides.
We will be making delicious salads with Goat Feta, local greens, toasted walnuts, and dried cranberries. The Three Graces Brie will be delicious on our all natural turkey panini with, carmelized onions, and homemade aoli. The Plain Jane Goat Chevre will be spiked with garlic and herbs and served on sandwiches with your choice of fillings. We may even make some savory goat cheese scones for breakfast.
